Raspberry Lemon Gummies

Gelatin is incredibly nourishing, rich in amino acids that support gut health, joint health, and skin repair. It’s particularly helpful for soothing the digestive tract and supporting a strong gut lining, which is especially important for little ones. The lemon offers a boost of vitamin C, while raspberries bring antioxidants and fibre. These gummies are quick to make and easy to store, making them a perfect wholefood snack to keep on hand.

  • ¾ cup water

  • ¼ cup lemon juice

  • ¾ cup frozen raspberries

  • 2–3 tbsp honey (not suitable for babies under 12 months)

Method:

  1. In a small bowl, combine the gelatin with ½ cup of water and set aside to bloom for 5–10 minutes.

  2. Add the remaining ¼ cup water, lemon juice, raspberries, and honey to a blender. Blitz until smooth.

  3. Pour the raspberry mixture into a small saucepan and add the bloomed gelatin. Warm over low heat, stirring gently, until the gelatin has fully dissolved (do not boil).

  4. Carefully pour the mixture into silicone moulds or a lined container.

  5. Refrigerate for 2+ hours or until set. Pop out of moulds or slice into finger shapes if setting in a tray.
